Simple Coleslaw 

This coleslaw recipe is one of my family’s favorite recipes to carry to BBQ’s, church potlucks or to family gatherings. It is so simple and easy to make, and it goes great with hotdogs and hamburgers, or even grilled chicken and smoked BBQ meats. You will need the following ingredients:

Recipe:

1 fresh cabbage

1/3 cup mayonnaise

1 tablespoon of sugar

1/2 teaspoon of salt

pepper to taste

Remove the top leaves of the cabbage and wash really well. Cut the cabbage into chunks, making sure to leave the core out as this is not something you want to eat. Using a box grater, grate the cabbage until you get about 4 cups of shredded cabbage. If you use a medium size cabbage, about 4 pounds or so, it should be about half.

Place the grated cabbage in a bowl and add the mayonnaise, sugar, salt and pepper. Mix well and cover and let sit for at least 20 minutes in the refrigerator. The coleslaw will make more juice as it sits, stirring again before serving. Enjoy!

Note: I grate my cabbage using a box grater and I place a piece of wax or parchment paper underneath the grater so that it is easier to move the grated cabbage to the bowl. You can also just buy the pre shredded coleslaw mix and use that or for easier shredding you can use a food processor.

I serve this coleslaw on hotdogs, with some fried chicken and vegetables or just as a side dish to smoked pork loin that I shred up to make sandwiches.
