This is a cookie recipe that I love making because it is so simple, but they look and taste like they took half a day to make. You will need the following ingredients:

Recipe:
1 box of lemon cake mix
2 tablespoons of vanilla pudding mix (you could use lemon too)
2 eggs, beaten
6 tablespoons of butter, melted
lemon juice
2 tablespoons of heavy whipping cream or milk
1 cup of powdered sugar
1 cup of fresh blueberries
Preheat the oven to 350 degrees.

In a medium bowl add the cake mix, 4 teaspoons of lemon juice, eggs, vanilla pudding mix, and butter and stir together.

This mixture will be thick as you are making a cookie dough and not a cake.

Spoon the cookie dough onto a greased cookie sheet pan and place 3 blueberries on each cookie. Bake for 10 – 12 minutes.

Place the cookies onto a wire rack to cool completely before icing them.

In a small bowl, add the powdered sugar, 2 teaspoons of lemon juice and the heavy whipping cream and stir until you get a thick icing. Tip: You may have to adjust the heavy whipping cream or the powdered sugar to get the consistancy you want.

Place a small teaspoon of icing on each cookie and spread it out evenly. Enjoy!
Note: You can use fresh lemon juice instead of the jarred kind if you wish too. You could also change up the ingredients using different flavors of cake mix and different fruit toppings. You can also use icing in a tub if you don’t want to make it fresh.
These cookies are great served at a family gathering, picnic or just as an after dinner treat.
