Skillet Fudge Icing

I grew up eating this icing on a plain vanilla cake that my grandmother would make from scratch. This icing is so simple to make, and it goes well with a boxed vanilla, white, chocolate, or yellow cake mix that you can bake straight from the box. You will need the following ingredients:

Recipe:

1/2 cup of whole milk

8 tablespoons of butter

3 tablespoons of cocoa powder

2 cups of white sugar

1 teaspoon of vanilla (you can add a little more if you really like vanillia)

Tip: You will need a large skillet to make this icing in as you do not want this hot boiling icing to boil over onto you or your stove.

Add the butter to the skillet and let it melt on medium heat. Add the milk, sugar, and cocoa powder and begin whisking this together until it is smooth.

Turn the stove to medium high and bring this icing to a boil while you continue whisking. When the icing reaches a boil reduce the heat back to medium heat and continue to boil the icing for 5 minutes. You will need to continue whisking this while it is boiling so the icing does not burn.

When the five minutes are up, remove the icing from the heat and whisk in the vanilla. Enjoy!

Note: You could make this in a large heavy bottomed saucepan if you do not have a large skillet. This icing will also set up as fudge when the cake has cooled.

I like to serve this icing over a sheet cake that I have made homemade or from a cake mix in a box. I have also halved this recipe and made this icing to pour over brownies.
