Sometimes my family is in the mood for a good crispy chicken filet sandwich, so I came up with this recipe that is so easy and delicious to make. You will need the following ingredients:

Recipe:
2 boneless chicken breasts
1 cup of buttermilk
1 tablespoon of pickle juice, optional
1/2 teaspoon of longhorn seasoning or a few dashes of hot sauce
1/2 cup flour
1/2 – 1 cup of frying oil
salt and pepper to taste
4 hamburger buns
1 teaspoon of butter

Start by trimming and cutting the chicken breast lengthwise.

Place the buttermilk, pickle juice, and longhorn seasoning into a bowl and stir together and place the chicken filets into the milk and let set for at least 15 minutes.
Preheat a skillet to medium heat and add the oil making sure to have about 1/2 inch of oil in your skillet. The amount will depend on how large a skillet you use.

Season the flour with salt and pepper and longhorn seasoning.
Take the chicken out of the buttermilk and add to the flour mixture and coat all sides of the chicken well.

Carefully place the coated chicken into the hot oil and cook until both sides are golden brown for about 10 minutes or so. The cooking time will depend on the size of the chicken breast. You need an internal temperature of 165 degrees.
Preheat the oven broiler and place the buns open side up on an oven safe pan and put some butter on the buns and broil until lightly golden brown.

Place the chicken filets on a paper towel and let drain and then place on the toasted sandwich bun and add your favorite fixings. Enjoy!

Note: I like to serve these with some potato chips or potato salad.
