My meatloaf recipe is one of my child’s favorite meals. It is a simple recipe, but they absolutely love them made in these muffin cups. You will need the following ingredients:

Yields: 6 muffin cups
1/2 pound of ground chuck
2 tablespoons of onion, diced finely
2 tablespoons of bell pepper, diced finely
2 tablespoons of milk
6 saltine crackers, crumbled into very small pieces
1 tablespoon of ketchup
salt and pepper to taste
Topping:
3 tablespoons of ketchup
1 teaspoon of mustard
1 tablespoon of brown sugar
Preheat the oven to 375 degrees.

In a medium mixing bowl add all the ground chuck, onion, bell pepper, milk, crackers, 1 tablespoon of ketchup, salt and pepper.

Mix together until it is all blended together. Tip: I use my hands but you could use a spoon.

Spray a standard size muffin tin with non-stick spray and divide the meat mixture into 6 equal size pieces and place them in the muffin tins.

Bake for 20 – 25 minutes or until the meatloaf muffins are almost done.

In a small bowl stir the topping ingredients together.

Place the mixture over the top of the meatloaf muffins and bake for an additional 5 minutes. Enjoy!

Note: You can double this recipe if you need to as this recipe makes enough for 3 people to have 2 each. I bake my meatloaf like this because this is how my family prefers it and it takes half the time to bake as baking it in a loaf form but you could bake this as a loaf and increase the cooking time.
I like to serve this with a side of creamed potatoes, green beans and macaroni and cheese.
