This recipe was given to my family by a very special person in our lives. This banana pudding is easy to make and extremely good to eat. To make this pudding you will need the following ingredients:

3 bananas, sliced
16 oz package of vanilla wafers
3 eggs, yolks only
3/4 cup of sugar
2 tablespoons of flour
1 1/2 cups of milk
1/2 teaspoon of vanilla extract

In a heavy bottom saucepan, or double boiler, add together the sugar, egg yolks, milk and flour and whisk mixing all the ingredients well. Keep whisking often while this mixture is cooking on the stove on medium heat. Cook until this mixture reaches a pudding consistency. Should take 10 to 15 mins. Remove from heat and add the vanilla extract.

In the meantime slice the three bananas into thin slices and layer some wafers, then bananas, then wafers and banana slices into a bowl. Keep layering this into a bowl until all the bananas and wafers have been used. You will need a large bowl for this.

Pour the vanilla pudding over the bananas and wafers and let sit for at least 5 minutes if you like crunchy pudding. If you like the pudding a more softer consistency, let it stand longer. Refrigerate leftovers.
Note: My family always serves this banana pudding warm and while the bananas are firm and the wafers are still crunchy. It is just the way we like it. You can add whipped cream or meringue as a topping but we like it plain.
You can use the leftover egg whites to make a meringue topping for this. You will need:
3 egg whites
1/2 cup of sugar
1 teaspoon of vanilla extract
1 teaspoon of cream of tartar
Beat the egg whites until stiff then add the sugar, cream of tartar, and the vanilla. Beat until stiff peaks form. Spoon this over the banana pudding and put under the broiler until it browns lightly.
