Cream Cheese Iced Banana Bars

This is another way I like to use up those ripe bananas that I have laying around. These are so easy to make and a crowd-pleasing dessert. You will need the following ingredients:

Bar Recipe:

2 cups of sugar

1 stick of butter

3 ripe bananas

3 eggs

2 cups of self-rising flour

1 teaspoon of vanilla extract

1/8 teaspoon of salt

Icing Recipe:

1/2 stick of butter

4 oz cream cheese

2 cups of powdered sugar

1 teaspoon of vanilla

An hour before cooking, lay out your butter and cream cheese so that it softens.

Preheat the oven to 350 degrees.

In a medium bowl combine the sugar and butter and cream with a mixer for 5 minutes or until it gets light and fluffy.

Mash the bananas in a separate bowl.

Add the mashed bananas, vanilla and eggs to the sugar mixture and mix together.

Add the flour and mix just until the flour is mixed well.

Pour this into a large greased baking dish 9 x 13 for cake like bars and bake for 25-30 minutes or for thinner bars pour onto a greased sheet pan and bake for 20 – 25 minutes or until a toothpick comes out clean. The cooking time will depend on how large a baking dish/pan you use.

Let the banana bars and let the bars completely cool down before icing.

To make the icing combine the butter and cream cheese together in a medium bowl and mix until light and creamy.

Add the powdered sugar and mix on low until mixed enough that it will not go everywhere and then add the vanilla and mix until creamy.

Ice the cooled banana bars. Enjoy!

Note: Store this in the refrigerator for up to 4 – 5 days.
