Copy-Cat KFC Chicken Pot Pie

My family loves the pot pie you get from KFC (not sponsored) so I decided to see if I could make up one using my old recipe and also going by the looks and taste of the restaurant one and I have to say I got really close. You will need the following ingredients:

Recipe

2 cups of shredded, precooked chicken

1 carrot

1/2 cup green peas

2 medium potatoes

1/2 of a medium onion

1 clove of garlic, minced

1/4 cup of butter

1/4 cup of flour

2 cups of chicken broth

1/2 cup of heavy whipping cream

1 1/2 cup of milk

salt and pepper to taste

1/2 teaspoon of fresh thyme

1/2 teaspoon of fresh sage

1 package of puff pastry

2 tablespoons of heavy whipping cream or milk to brush the pastry with

In a dutch oven melt the butter and add the carrots, onions, garlic and potatoes and cook for 4 minutes.

Add the flour, salt and pepper and cook for 2 minutes.

Add the chicken broth and milk and cook until the vegetables get tender, about 20 minutes.

Preheat the oven to 400 degrees.

Add the chicken, heavy cream and the fresh herbs and cook for another 5 minutes.

Pour this mixture into a casserole dish and cover with the puff pastry.

Brush the heavy whipping cream over this and place into the oven.

Bake for 30 – 35 minutes.

Remove from the oven and let sit for 10 minutes. Enjoy!

Note: You can use fresh chicken in this recipe, just cook it before you add it to the recipe. You can also add celery and any other vegetable you like to this recipe.
