Longhorn’s Copycat Parmesan Crusted Chicken

This is one of my favorite entrees to get at our local Longhorn’s restaurant so I came up with a version that I could make from home. It is delicious and tastes almost like the one you get from the restaurant. You will need the following ingredients:

Recipe:

2 chicken breast

1 tablespoons of oil

3 tablespoons of butter, melted

1/2 teaspoon of garlic powder

2/3 cup panko breadcrumbs

4 slices of provolone cheese

1/4 cup of buttermilk ranch dressing

1/4 cup of grated parmesan cheese

salt and pepper to taste

Preheat oven safe skillet on medium heat.

Trim and slice each chicken breast into chicken cutlets by cutting lengthwise. Add the oil to the skillet and place the chicken cutlets in the oil and season with salt and pepper. Cook the chicken golden brown on both sides. This should take 7 – 10 minutes and an internal temperature of 165 degrees.

Mix together the breadcrumbs, garlic powder, 1/8 cup of parmesan cheese and the melted butter and set aside.

Add 1/8 cup of parmesan cheese to the buttermilk ranch dressing and set aside.

Turn on the broiler to the oven.

When the chicken is cooked through, spread the ranch dressing evenly on the chicken breasts and add the breadcrumb mixture and then top with a piece of the provolone cheese. Place the pan into the oven on broil and heat until the cheese melts and the breadcrumbs turn golden brown, being careful not to burn it.

Note: This is great served with a side salad and baked potatoes or just some broccoli and some creamed potatoes.
