Sheree's Homemade Cooking Made Easy

This recipe is a steak and chicken recipe that can be finished in under 15 minutes. So, this is one of my go-to recipes whenever I am short on time or just want to make something fast and easy. You will need the following ingredients for this recipe:

8 oz steak

8 oz chicken breast or about 4 tenderloins

1/2 of a bellpepper

1/2 of a onion

Fajita seasoning (I use Kinders)

1 tablespoon of oil

Salt and pepper to taste

1 Lime

4 large burrito size tortillas

1 cup of shredded cheese

Garnishes: cheese dip, salsa, guacamole, sour cream

Preheat the skillet to medium high heat.

Slice the steak and chicken breast into thin strips. Add the oil to the hot skillet (I use cast iron) and place the steak and chicken into the hot skillet. Stirring several times.

While that is cooking, slice the pepper and onion into thin strips. After the steak and chicken has been cooking for about 5 minutes add the vegetables. Cook for additional 3 – 5 minutes more, or until the meat is done and then sprinkle the mixture with salt and pepper and about 1/2 teaspoon of the fajita seasoning. Cut the lime and squeeze the lime juice over the fajita mixture.

Preheat a non- stick skillet to medium heat

Take a large burrito tortilla and place about 1/4 of the mixture into the center of the tortilla and add cheese. Fold up the tortilla into a burrito and add 1/2 teaspoon of butter to the hot skillet and add the burrito. Cook on one side until golden brown. Should take about 1 – 2 minutes and then turn over and cook the other side. Place the burrito into a plate and cook the other burritos. Enjoy!

Note: This fajita mixture can be served in standard fajita shells as fajitas or you could make fajita nachos. I have served this fajita mixture several different ways.
