This is a dessert that is perfect for those hot summer days. It is simple to make and if you use store bought pie filling you don’t have to cook anything but I made my own since I had some cherries that I needed to use up. You will need the following ingredients:

Pie Filling:
2 cups of cherries
1/2 cup of sugar
1/3 cup of water
3 tablespoons of cornstarch
3 tablespoons of cold water
Crust:
12 graham crackers
1/4 cup of sugar
6 tablespoons of melted butter
Filling:
8 oz of neufchatel cheese or cream cheese
small container of cool whip
1 cup of sugar
Wash and pit the cherries.

Tip: I do this by using a large paperclip that I have washed and opened up. This method works really well.

Add the cherries, 1/3 cup of water and 1/2 cup of sugar to a saucepan and cook on medium until the cherries are soft.
In a small bowl mix together the cornstarch and 3 tablespoons of cold water and add it to the cherries and cook until it thickens.

Remove from the heat and let cool down.

Crush the graham crackers and add the 1/4 cup of sugar and the melted butter and place into a 8 x 8 baking dish.

Press it down to form a crust. Add this to the refrigerator for 30 minutes to let it set.

In a mixing bowl add the neufchatel cheese and 1 cup of sugar and mix until light and fluffy.

Fold in the cool whip and set aside.

Add the cream cheese mixture to the top of the graham cracker crust.

Then place the cooled cherry pie filling on top. Cover and refrigerate for at least 1 hour. Enjoy!

Note: You can make this dish using whatever pie filling is your favorite. From strawberry, apple, blueberry or peach it would all make a delicious dessert.
