Hamburger Tater Tot Skillet

This recipe is my version of the tater tot casserole that is out there. My family loves the version I came up with as it uses a cream of cheddar soup instead of the standard cream of mushroom. You will need the following ingredients:

Recipe:

1/2 cup of onion, finely diced

1/4 cup of bell pepper, finely diced

1 pound of ground chuck

1 fresh tomato, diced into small pieces

1 can of cream of cheddar soup

1 – 2 cups of shredded colby jack cheese

1 package of tater tots

salt and pepper to taste

1/2 teaspoon of longhorn seasoning (my recipe linked below)

Preheat the oven to 375 degrees.

In a large iron skillet, or oven safe skillet, add the onion, bell pepper and ground chuck and cook until the beef is browned.

Drain and add the beef mixture back to the skillet.

Add the diced tomatoes and a can of cheddar cheese soup.

Stir until mixed together.

Sprinkle 1/2 cup of the cheese over the top and add the tater tots and place this into the oven and bake for 30 minutes.

Carefully remove this from the oven and sprinke the other 1/2 cup of cheese over the top and place back into the oven for 5 minutes.

Remove from the oven and let this rest for 5 minutes. Enjoy!

Note: You can make this in a casserole dish also, I just find that cooking it all in one skillet makes for much easier clean up. You add more cheese if you prefer.

I like to serve this with a dinner roll and a side salad on the side
