Honey Mustard Lime Chicken

Every summer my family likes to grill up different recipes using several flavorful marinades. This is one of my family’s favorites. You will need the following ingredients:

Recipe:

1 1/2 – 2 pounds of boneless chicken breast

1/4 cup of oil

1 tablespoon of honey

2 tablespoons of soy sauce

2 small cloves of garlic, minced

1 lime, juiced and zested

salt and pepper to taste

1 1/2 teaspoons of dijon mustard

1 teaspoon of fresh cilantro

(I use a ziploc but you can use a large bowl)

Trim and slice the chicken breast lengthwise into 2 to 3 pieces. This will ensure that the chicken cooks through before it dries out.

In a gallon size ziploc bag add the oil, honey, soy sauce, garlic, lime juice and zest, dijon mustard, cilantro, salt and pepper and mix together by shaking the bag around.

Add the chicken breast and marinate for at least 30 minutes but no longer than 4 hours, as this will cause the chicken to break down too much.

Preheat the grill and grill the chicken until an internal temperature of 165 is reached. This will take between 12 – 15 minutes.

Remove from the grill and let the chicken rest for 5 minutes. Enjoy!

Note: You can use any type of chicken you like whether it is dark or light meat, bone-in or boneless. Just adjust the cooking time to ensure that the chicken reaches that 165 degree internal temperature.

I like to serve this chicken with a side salad and a baked potato.
