Garlic Pepper Marinated Chicken

Every summer I like to fix several different marinades so that I am not fixing the same recipe over and over. This is an easy marinade to prepare and a welcome change from the standard bbq chicken recipes. You will need the following ingredients:

Recipe:

2 boneless chicken breast

1 teaspoon of dijon mustard

1 teaspoon of salt and pepper

3 garlic cloves, minced finely

pinch of cayenne pepper

1 lemon

1/2 cup of oil, I use avocado oil

Trim and cut the chicken breast into cutlets by cutting them in half long ways. This ensures that the chicken does not dry out while the chicken is cooking through to an internal temperature of 165 degrees.

Add the dijon mustard, garlic, salt, pepper, oil, cayenne pepper, lemon zest and lemon juice to a gallon bag and mix the marinade well by shaking the bag several times and squeezing it with your hands.

Add the chicken and marinade for at least 30 minutes or up to 12 hours.

Preheat your grill and place the chicken cutlets on the grill and cook until they reach an internal temperature of 165 degrees. This should take about 12 -15 minutes. Tip: You can also prepare this marinated chicken recipe in the oven or on the stove top just make sure to get the internal temperature 165 degrees.

Remove the chicken from the grill and let it rest for 5 minutes. Enjoy!

Note: You can use this marinade on pork chops or white types of fish.

I like to serve this chicken with a baked potato as a side along with a side salad or some garlic bread.
