There is nothing better on a cold, rainy day than a nice warm bowl of chili. Whether it is served over saltine crackers or made into chili cheese fries, this recipe is truly a family favorite. You will need the following ingredients:

Recipe:
1 pound of lean ground chuck
1 onion
2 cloves garlic
1 quart of pinto beans, or 2 15 oz cans
1 quart of crushed tomatoes, or 2 15 oz cans
1 jalapeno pepper
1/4 – 1/2 cup of chili powder
1/2 teaspoon of smoked paprika
salt and pepper taste
Garishes: Green onions, cheese, sour cream, saltine crackers,
In a large dutch oven brown the ground chuck. Dice the onions, and jalapeno pepper and garlic into small pieces and add the to ground chuck. Drain the ground chuck and add it back to pot.

Add salt and pepper, tomatoes, pinto beans, and the chili powder and smoked paprika and stir well. Simmer in the dutch oven for at least 30 minutes. Enjoy!

Note: You may use any type of bean that you enjoy in your chili whether it is chili beans, kidney beans, or just an extra pound of ground chuck without the beans.

We love to serve this chili over saltine crackers and sometimes we will cook up some french fries and cover them with chili and add some cheese and place under the broiler and melt the cheese. This is a wonderful addition to a family gathering or a potluck dinner.
**I can pressure my pinto beans and water my tomatoes every year so that is why I tried to adjust the measurements for them.**
