One of my family’s favorite ways to eat potatoes is when I put them in a large iron skillet and add some onions and bell peppers and roast them in the oven. They are so simple and easy to make, and they roast in the oven while the meat is cooking and most of the time it is steak, chicken, fish or pork chops. You will need the following ingredients:

6 medium potatoes
1 bell pepper
1 onion
2 tablespoons of oil
2 tablespoons of butter, diced in small pieces
salt and pepper to taste.
Preheat your oven to 400 degrees. (If you have a roast setting use it, but if not the regular bake setting works just fine)
Peel, and wash your potatoes. Cut them into bite size pieces. Next, chop your onion and bell pepper up into bite size pieces.

In a large skillet, place the oil, potatoes, peppers, and onions and stir to coat them with the oil. Add salt and pepper and place the butter on top of the mixture and place in the oven and cook for about 25-35 minutes stirring frequently. Cook time will depend on the size of the vegetables. The smaller they are, the quicker they will cook. Enjoy!

Note: These roasted potatoes are a great side dish when having a BBQ or just cooking a simple meal at home. We love to add these potatoes along the side of a steak or some grilled chicken.
If you do not like peppers and/or onions just leave them out.
