This is such a cool and refreshing salad that I make several times every summer. I don’t know where I came up with this recipe because I have been making this recipe for over 30 years. It is such a simple recipe to make as there is no cooking involved and it is a hit every time I make it. You will need the following ingredients:

Recipe:
1 9 oz container of whipped topping
1 3.4 oz box of instant pistachio pudding mix
1 8 oz can of crushed pineapple
1 cup of small marshmallows
1/3 cup of chopped walnuts or pecans (optional)
Thaw the whipped topping by placing it in the refrigerator several hours before making this recipe.

In a medium bowl sprinkle the pistachio pudding mix over the undrained crushed pineapple and stir together.

Fold in the marshmallows and then add in the whipped topping. Cover and refrigerate for at least 1 hour. Enjoy!

Note: If you can not eat nuts please note the pudding mix does have pistachios chopped very finely up in it. You can double this recipe if you are serving it to a larger crowd as this recipe makes 4 – 6 servings. This recipe will keep in the refrigerator for up to 3 days.
I like to make this and take it to family or social gatherings as it is a great side dish to make on these warm summer days when you are having a BBQ and I have even served this at baby and wedding showers.
You can dress this dish up by adding a maraschino cherries on the top of the dish when it is served.
