I have always heard of corn chowder, but I have never eaten it. It is not a dish that is served around my area and no one I know has ever cooked it, so I decided to read up on a few recipes and make one using the ingredients I had on hand. This recipe was delicious, and my family loved it. You will need the following ingredients:

Recipe:
3 – 4 ears of fresh corn (frozen or canned will work in a pinch)
1/2 of an onion, diced
1/2 of a bell pepper, diced
1 qt of chicken broth
1/2 cup of milk
1/2 cup of heavy whipping cream
4 tablespoons of butter
1/4 cup of flour
8 oz of monterery jack cheese, shredded
3 green onions, sliced thinly
salt and pepper to taste
Preheat a large pot to medium heat and add the butter.

After the butter has melted add in the onions and the bell pepper and cook them for about 3 – 5 minutes.
Shuck, silk and wash the corn. Cut the corn from the cobs and add it to the pot. Let this cook for about 3 minutes.

Sprinkle the flour in and cook for another 3 minutes or so. You want to cook the raw taste from the flour.

Add the chicken broth and simmer this on the stove until the chowder thickens. This should take about 5 – 10 minutes.
Turn the chowder to low and add the milk and the heavy whipping cream. Tip: You can substitute the heavy whipping cream and milk for half-and-half if you have that instead.
Place a lid on this and keep on low for 15 minutes or so. Right before serving 1 1/2 cups of cheese and save the rest for topping everyone’s bowl. Enjoy!

Note: You can add a jalapeno pepper that is diced if you like spice. Just substitute some of the bell peppers for this.
I served this chowder with a sprinkling of cheese, sliced green onions and a side of crusty bread.
