Cream of Chicken Soup 

Have you ever needed a can of cream of chicken soup for a recipe and did not have one in your pantry? Or maybe you are like me and do not like the taste of the cream of soups you can buy. You can make your own, homemade, in minutes. You will need the following ingredients:

Recipe:

4 tablespoons of butter

1/4 cup of flour

1 clove of garlic, minced

2 tablespoons of finely diced onion

2 cup of chicken broth, homemade or store bought

1 cup of whole milk

salt and pepper to taste

In a medium saucepan add the butter, onion and garlic and cook this on medium heat until the onions and garlic and see through. This will take about 3 minutes. Make sure not to cook this too hot or it will burn the butter.

Sprinkle in the flour and whisk this together. Cook the flour for about 3 more minutes or until it is a light brown color. Tip: You need to make sure to do this step because if you do not cook the raw taste out of the flour then you will be able to taste it.

Add the chicken broth and the milk and continue whisking this until it begins to bubble. It will thicken as it cooks. Remove from the heat and use in your recipe or just eat it as a creamy chicken soup. Enjoy!

Note: You could use this recipe to make a cream of vegetable soup by substituting vegetable broth instead of the chicken broth. Add some mushrooms to the onions and garlic and beef broth instead of the chicken broth for a cream of mushroom soup.

I like to use this when a recipe calls for cream of chicken soup. You have to remember though that this soup is not condensed like it is in the can so be careful of adding too much to your recipe as this recipe yields about 3 1/2 cups of soup.
