I love making fresh, homemade pico de gallo instead of purchasing it in the store as I just think it tastes a lot fresher. And, when I make my own, I can control the spice level and the ingredients that I put it in.

Dice the tomatoes, onions, bell peppers and the jalapeno pepper into small, finely diced pieces.
Add the vegetables to a medium bowl and zest and juice the lime and then add it to the bowl.
Season the pico de gallo with salt and pepper and then add the cilantro. Stir this mixture together until everything is well mixed.

Let this sit in the refrigerator or on the counter for at least 10 -15 minutes before serving so that the recipe has time to come together. Enjoy!
Note: You can leave the bell pepper out if you like your pico de gallo hot and spicy. Just add another jalapeno pepper instead. If you like your pico de gallo to be on the milder side, seed and devein a jalapeno pepper before adding it to this recipe. Feel free to adjust the amounts of the vegetables that you put in this recipe to your preference.
I like to serve this fresh pico de gallo on burrito bowls, fajitas, quesadillas, grilled chicken, or just with some plain tortilla chips on the side.
If you have leftovers, this will store in the refrigerator for up to 3 days.
