Chicken Philly Cheese Fries

Upon running out of sandwich rolls at the last minute, this recipe was created. I actually like it better on fries than I do on the bun. It is a meal that can be made in under 20 minutes. For this meal you will need the following:

Recipe:

1 chicken breast, sliced thin into strips

1/2 bell pepper sliced into strips

1/2 sweet onion sliced into strips

1 cup of shredded monterey jack cheese (or cheese of your choice)

1/2 bag of french fries, cooking according to package

1 tablespoon avocado oil

salt and pepper to taste

1/2 teaspoon of longhorn seasoning (my recipe)

First start by cooking your fries to your preference.

While the fries are cooking, preheat a skillet on medium high and add the oil and heat until hot. Add the chicken, bell pepper, and onion and cook until done, stirring often. Season with salt and pepper and longhorn seasoning.

Place your cooked fries onto an oven safe serving platter and using a spatula carefully place the chicken, bell pepper, and onion mixture on top of the fries. Add the cheese and place it in the oven under broil allowing it to melt over the chicken and vegetables.

I like to serve this with a little steak sauce or ranch dressing on the side. You could substitute some steak sliced thin or do a mixture of steak and chicken. Either way it would be delicious. The sprinkling of my prairie seasoning recipe makes this even more wonderful.

Note: If you have a large flat top griddle, this is easy to cook as you can cook the fries, chicken, pepper, and onions all at one time.
