Cheesy Refried Bean Casserole

I made this casserole using my home canned pinto beans, but you could use freshly cooked pinto beans, or two 15 oz cans of pinto beans purchased from the store. This could also be served as a dip. You will need the following ingredients:

Recipe:

2 tablespoons of butter

1/2 on an onion, diced finely

1/2 of a jalapeno pepper, diced (you can use it all if you like it spicy)

1 clove of garlic, minced

1/2 teaspoon each of cumin, coriander and chili powder

32 oz of pinto beans in water or 2 15 oz cans

8 oz of pepper jack cheese, shredded

salt and pepper to taste

Preheat the oven to 350 degrees.

In a large cast iron or oven safe skillet add the butter and cook on medium heat until the butter melts. Add the jalapenos, onions, and garlic and cook for about 3 minutes.

Add the cumin, coriander, chili powder, salt and pepper and cook the spices for 3 minutes.

Pour in the pinto beans and mash these using the back of a spoon or a potato masher. You may need to add some water if the beans do not have a lot, but do not drain them before adding to the skillet. Heat the beans through.

Add 1/2 cup of cheese and stir this into the beans. Then add another cup evenly to the top and bake for 20 – 25 minutes.

Remove the skillet from the oven and add the remaining cheese to the top and let this melt. Enjoy!

Note: You can add whatever melting cheese you have on hand. You just need around 2 cups. You could substitute black beans for the pintos if you like them instead.

I like to serve this as a side to tacos or fajitas. You could also serve this as a dip with tortillas or corn chips.
