Who doesn’t love most of the restaurant’s mac and cheese. This is a recipe that I make that people think is oven baked but it is just toasted under the broiler in the oven. This keeps this macaroni and cheese from getting too mushy as pasta dishes do sometimes when they are baked. To make this recipe you will need the following ingredients:

Recipe:
1 cup of elbow macaroni (or your favorite pasta shape)
4 tablespoons of butter
4 tablespoons of flour
3 cups of whole milk
1/8 teaspoon of ground mustard
3 cups of shredded colby cheese
salt and pepper to taste
Start by boiling water to cook your elbow macaroni or your favorite pasta shape and cook the pasta for about 8 minutes.
While your pasta is cooking, heat an oven safe skillet or saucepan to medium heat and melt the butter and add the flour and cook for about 3 minutes. Add the salt, pepper, ground mustard (this brings the cheese taste out) and milk and cook until thick.

Take the mixture from the heat and add in the cheese, stirring until melted. Drain your pasta and add it to the cheese, mix well and place under the broiler and cook until the toasted brown spots appear. Be careful not to burn. Enjoy!

Note: This recipe is good all by itself or served with your favorite meat and vegetables. I usually serve this with grilled or baked meat and green beans or broccoli on the side.

You can use three cups of your favorite cheese, it can be a mixture of whatever shredded cheese you enjoy. Just note that sometimes cheeses that are pre shredded do not melt as good as the cheese you shred yourself.
