I love making fresh homemade creamed corn using fresh corn on the cob but, did you know you can make it from frozen corn also? This recipe is so simple to make.

You will need the following ingredients:

Recipe:
3 ears of fresh sweet corn or 2 cups of frozen corn
1/4 cup of milk
1 teaspoon of butter
1 tablespoon of flour
2 tablespoons of water
1 – 2 teaspoons of sugar (optional)
salt and pepper to taste
If you are using fresh corn, shuck, silk and wash the fresh corn under cold running water. This will clean the corn and help remove those stubborn corn silks.
Tip: Get a large bowl and place a small cereal bowl upside down inside the larger bowl. Place the ear of corn on top of the small bowl and use a sharp knife to carefully cut the corn kernels away. Then turn the knife over and scrape the corn cob with the dull side. This will remove the milk or juice from the cob.
Heat a medium skillet on medium and add the corn, milk, salt, pepper and butter and cook this for 8 – 10 minutes. Be careful to stir often as you do not want the corn to burn. You may need to add a little more milk if you are using frozen corn.
Stir the cold water and the flour together until it dissolves. Pour this into the corn and stir and continue cooking the creamed corn until it is thick. This should take about 3 – 5 more minutes.

Sprinkle in the sugar and serve. Enjoy!
Note: You can double this recipe if you need a larger amount for a bigger crowd.
I like to serve creamed corn as a side dish to fried chicken, green beans and potatoes and fresh coleslaw.
