Blueberry Biscuits with Icing

I purchased some blueberries at the store the other day because I wanted to see if I could make a blueberry biscuit recipe as good as the local restaurant serves. I did. This recipe is so simple to make. You will need the following ingredients:

Recipe:

1 1/2 cups of self rising flour

1 tablespoon of shortening

1/3 cup of powdered sugar

3/4 cup of whole buttermilk

3/4 cup of fresh blueberries

Glaze

1/3 cup of powdered sugar

1 teaspoon of half and half or milk

Preheat the oven to 400 degrees.

In a medium bowl add the flour, powdered sugar and the shortening and crumble the shortening in the flour until it is the size of course crumbs.

Add in the blueberries and carefully coat them with the flour. Tip: This will keep the blueberries from falling to the bottom when they cook.

Pour in the buttermilk and very carefully stir this together until everything is mixed in. You can use a spoon or your hands to do this.

Roll or pat the biscuits out and place them into a greased pan. You will get 5 – 6 medium sized biscuits.

Bake the biscuits for about 20 minutes or until the top is golden brown. Remove the biscuits from the oven and place them onto a serving plate.

In a small bowl add the 1/3 cup of powdered sugar and the half and half and stir this together until a thin glaze is made. Drizzle this glaze over the hot biscuits and serve. Enjoy!

Note: You can use any berry that is your favorite to make this recipe.

I like to serve these biscuits as a morning breakfast treat with a side of scrambled eggs and bacon or sausage.
