Have you ever heard the saying, “that’s as flat as a flitter”? Well, I am gonna tell you what a flitter is, and I am gonna give you my family’s recipe that dates back over 100 years. My mom still makes them several times a week, as this is a favorite of my dad’s. These are really easy to make and honestly quite tasty. You will need the following ingredients to make this:

Recipe:
1/2 cup of self-rising flour
1/4 cup of water
2 tablespoons of butter
Heat your skillet on medium heat.

In a bowl put the flour and water and mix until no lumps are left. The batter needs to be thin.

Melt about 1/2 teaspoon of the butter in the skillet and pour in about 1/8 of a cup of batter. Cook until firm enough to flip and cook until lightly golden brown on both sides. It is like making pancakes, the poor man’s way. Repeat this until there is no batter left. Enjoy!

My mom grew up eating these daily for breakfast and she started making them for her family and we all love them and still eat them till this day.
Note: These are good served with white gravy and eggs, pancake syrup, honey or even jelly. I make these using water but you can use milk also.
You can double this recipe easily or even half it.
This is just a simple recipe, made with very few ingredients but it kept the families fed. I know my mom’s grandmother made hers using bacon fat, lard or whatever fat she had for frying.
