Crispy Potato Wedges

I made these potato wedges the other night to go with a dinner I was making, and they were so good. They were so easy to make, and they were done in no time. You will need the following ingredients:

1 packet of italian salad dressing mix

4 -5 russet potatoes, any type will do

salt and pepper to taste

3 tablespoons of oil

Preheat the oven to 400 degrees.

Wash, peel, and slice the potatoes into wedges. Tip: If you do not mind the peeling being on the potatoes just scrub them really well and leave it on.

Place the potato wedges into a large bowl and season them with salt and pepper. Add the oil and the Italian salad dressing mix and stir the potatoes around until the potatoes are all evenly coated in the spices. Make sure that none of the potatoes are stuck together.

Line a large baking sheet with parchment paper or spray a large oven safe dish with cooking spray and lay the potatoes out so that they are not overlapping each other.

Bake the potatoes for 20 minutes and then carefully remove the potatoes and use a spatula and turn the potato wedges oven and place them back into the oven to continue baking for 10 -15 minutes. Bake time will vary on how large the potato wedges are. Potatoes are done when they are fork tender. Enjoy!

Note: You can also dice the potatoes just to adjust for the cooking time.

I like to serve these potatoes as a side to grilled chicken, pork or beef. They also go great with hamburgers.
