I enjoy making my favorite Chinese recipes and this is certainly one of them. I have been asked to share my simple chicken and broccoli recipe. You will need the following ingredients:

Recipe:
1/2 pound of chicken breast, sliced into 1/4 inch strips
1 medium onion, sliced thinly
1 head of broccoli crowns, cut into bite size pieces
2 cloves of garlic, minced
1/2 teaspoon of fresh ginger
1 tablespoon of oil
Marinade:
1 tablespoon of dry cooking sherry
1/2 teaspoon of salt
1 teaspoon of cornstarch
Sauce:
2 tablespoons of dry cooking sherry
1 tablespoon of soy sauce
1/4 cup of water
1 tablespoon of brown sugar
1 tablespoon of cornstarch
1/4 teaspoon of salt
Precook about 2 cups of your favorite rice to add to this recipe.

Mix the marinade ingredients together and add the chicken and let it marinade while the broccoli is cooking.
Preheat a large skillet to medium high heat.

Add 1/4 cup of water and the broccoli and onions and cook until the water has dissolved. Remove this from the skillet and place it into a bowl and sit aside.

Pour the tablespoon of oil and let it warm up. Add the chicken in a thin layer and cook the chicken until it is golden brown on one side then flip the chicken over and cook until almost cooked through.

In a small bowl add all the sauce ingredients and stir this together.
Add the minced garlic and ginger and stir this in with the chicken. Cook for 1 minute.

Pour in the sauce and add the broccoli and onions back into the skillet and stir and remove from the heat. Serve this over your favorite rice. Enjoy!

Note: You can double this recipe if you are feeding more than 2 – 3 people. Also, if you want the chicken and broccoli to have more sauce, just double the sauce ingredients.
I like to serve this chicken and broccoli with a side of jasmine rice and some soy sauce.
