I saw these silver dollar pancakes at a specialty grocery store the other day and I was astonished at the price of them. I came home and decided to make my own as they could not possibly be that complicated. I used the following ingredients:

Recipe:
1 egg
1 cup of whole milk
1 1/4 cup of self rising flour
1 tablespoon of sugar
2 tablespoons of butter. melted
2 -4 teaspoons of neutral oil
1 teaspoon of vanilla extract
Preheat a large skillet or a griddle on medium heat. You do not want this griddle to hot as the pancakes will burn. You can use a skillet for this too.

In a medium bowl add the milk and the egg and whisk together until they are mixed.

Add in the flour, sugar, vanilla, and the melted butter and whisk just until it comes together. There will still be some lumps in the batter and that is okay as overmixing will cause the pancakes to be tough.
Place a light coating of oil on the pan. Tip: You can use butter, and I do sometimes, but butter will cause the pancakes to become dark as butter turns brown and may burn when heated at high temperatures.
Use a tablespoon and place one tablespoon of batter on the griddle. You should be able to get about 4 – 6 during each cooking time. It will depend on the size of your griddle or skillet.

Cook the pancakes until you see bubbles on the side facing you and then flip the pancakes with a spatula.

Cook for about 30 seconds and remove the pancakes from the griddle and start again until you have no more batter left. Enjoy!
Note: You can also add fruit or chocolate chips to the batter.
I like to serve these with a small pat of butter and our favorite pancake syrup and a side of fresh fruit.
