Egg-Free Mustard Potato Salad

This potato salad recipe is so delicious, and it is really simple to make. My family truly loves this version of potato salad when we are having any kind of bbq. You will need the following ingredients:

Recipe:

5 – 6 medium russet potatoes, diced

1/2 of an onion, diced finely

1/4 cup of dill pickles, diced

1 1/2 tablespoons of yellow mustard

1/2 cup of mayonnaise, you can add more

1 teaspoon of paprika

1/2 teaspoon of parsley

1 tablespoon of chives, diced

salt and pepper to taste

Add the diced potatoes to a medium saucepan and cover them with 2 inches of cold water. Place the saucepan on medium high heat and add 1/2 – 1 teaspoon of salt. This will help season the potatoes as they cook. Cook the potatoes until they are fork tender. Cook time should take 15 -20 minutes as it will depend on how large you diced the potatoes.

In a medium bowl add the mayonnaise, yellow mustard, pickles, onions, parsley, salt, pepper and stir this together until it is creamy.

When the potatoes have finished cooking, drain them and place the potatoes into the mustard dressing and stir this carefully together until it is well mixed. Sprinkle the chives evenly over the top.

Place the potato salad into the refrigerator to cool, or you can serve it warm. I have eaten it both ways and it is delicious either way. Enjoy!

Note: You can add sweet or dill pickles to this recipe along with celery and diced eggs.

I like to serve this potato salad when I am cooking bbq or cheeseburgers but this side dish compliments several other main dishes.
