Creamy Garlic and Cheese Potatoes

I love making these creamy garlic and cheese potatoes when I need a side dish to go with something I have grilled on the grill. This is a simple recipe to make that takes creamed potatoes up a notch. You will need the following ingredients:

Recipe:

4 – 5 medium potatoes, I use russet

2 cloves of garlic

1/4 cup of milk (you may need a little more)

1/2 stick of butter

1/2 cup of cheddar cheese, grated

salt and pepper to taste

parsley flakes for color

Wash, peel and cut the potatoes into chunks. Tip: The smaller you cut the potatoes the quicker they will get tender.

Mince or grate the garlic and add it in with the potatoes. You will want the garlic to be in small pieces as you do not discard it.

Add the potatoes and garlic to a large pot and cover the potatoes with at least an inch of water. Add 1/2 teaspoon of salt to the potatoes and bring the potatoes to a boil and boil them gently until they are fork tender. This should take about 12 -15 minutes.

Drain the potatoes and garlic and add them back into the warm pot and add the cheese, butter, milk, parsley, salt and pepper and use a potato masher to mash them until they are creamy. You can also use a hand mixer to do this step if you wish.

When serving the potatoes add a sprinkling of parsley and a small pat of butter on the top. Enjoy!

Note: Chives and sour cream would be a great addition to these creamy potatoes. I like to use the leftover potatoes to make potato patties the next day.

I like to serve these with some grilled chicken, steak, ribs, or fish. This side dish will go with a lot of different main dishes.
