Broccoli Rice Casserole

I am not a big fan of canned soups so I decided to see if I could come up with a recipe for a broccoli casserole without using cream of mushroom soup. I came up with a really simple recipe. You will need the following ingredients:

Recipe:

1 cup of cooked white rice

3 cups of broccoli florets

1 clove of garlic, minced

1/2 of an onion, diced finely

1 1/2 tablespoons of flour

1 1/2 tablespoons of butter

1 cup of milk

salt and pepper to taste

1 1/2 tablespoons of cream cheese

1 cup of shredded cheddar cheese

1/4 cup of parmesan cheese

1/2 cup of buttered crackers, crumbled

Preheat the oven to 350 degrees and grease a 8 x 8 or 9 x 9 baking dish.

Place the broccoli into a medium skillet with 1/2 cup of water and add a lid and cook on medium heat until it reaches the doneness you prefer.

In a medium saucepan add the butter, garlic and the onion and cook on medium heat for about 3 minutes or until the onion becomes see through. Be careful not to burn the garlic.

Add the flour, salt and pepper and cook this for about 2 minutes. Stir in the milk and whisk until this gets thick and creamy.

Remove this from the heat and stir in the cream cheese, 1/8 cup of parmesan cheese and 1/2 cup of shredded cheese and stir this until it is lump free.

Add the cooked broccoli and the rice and stir this together and then pour it into the baking dish.

Top this with the remaining cheese and buttered crackers. Tip: I like to mix mine together in a small bowl and cover the casserole evenly.

Bake the casserole for 25 -30 minutes or until it is bubbly and golden brown on the top. Enjoy!

Note: You can use frozen broccoli and just steam it in the microwave if you want to make this casserole simpler.

I like to serve this alongside some chicken or pork chops and a nice roll.
