Stuffed Bell Pepper

I love making these stuffed bell peppers as they are really simple to make and most of the cooking is done in the oven, so it makes for an easy meal without me having to watch it constantly on those busy days. You will need the following ingredients:

Recipe:

3 large bell peppers

1 pound of ground beef

1 clove of garlic

8 oz of tomato sauce

1 clove of garlic, minced

1 small onion, diced

1 cup of pre-cooked rice

1 to 1 1/2 cups of cheese. shredded

salt and pepper to taste

Preheat the oven to 375 degrees.

Preheat a large skillet to medium high heat and add the ground beef, onions, garlic and salt and pepper and cook this until the beef is cooked through.

Drain this and then add the cooked rice and about 1/2 of the tomato sauce, saving the rest for topping the bell peppers.

Wash and slice the bell peppers open from the top to the bottom so that you have two equal pieces. Remove the seeds and the membranes. Tip: If you like your peppers softer you may want to boil them in water for 4 – 6 minutes. I like mine with a bite to them so I do not do this.

Lay the peppers on a baking dish and add the beef mixture, filling the peppers to the top. Add a teaspoon of tomato sauce.

Then add a handful of cheese to the top of the peppers. Place the peppers in the oven and bake for 40 – 45 minutes. Check on them after 25 minutes or so and if the cheese is getting too brown, loosely cover the peppers with a piece of foil. I spray mine with cooking spray to keep the cheese from sticking to it.

Remove the peppers from the oven and let them sit for 5 minutes. Enjoy!

Note: You can leave any of the spices out that you do not enjoy such as the onions, and garlic. Also, you do not have to cover these with cheese if you do not wish too. You could add diced tomatoes instead of the tomato sauce.

I like to serve these peppers with a side of creamed potatoes, green beans or mac and cheese.
