Slow Cooker Sirloin Roast with Vegetables

Knowing that I was going to be in the garden planting my potatoes, onions, leeks, broccoli, and cabbage I knew that I needed a quick and easy meal to come into the house too. So, I thought about this easy recipe that I just happened to have all the ingredients to make. This is prepared in the slow cooker, but you could cook it in the instant pot or the oven. You will need the following ingredients:

Recipe:

2 pound sirloin roast

1 onion

4 carrots

5 medium potatoes

4 cups of beef broth

4 tablespoons of butter

salt and pepper to taste

1 tablespoon of oil

Start by heating a skillet on medium high heat and adding the oil. Season the roast on both sides with salt and pepper and sear the meat in the skillet.

Peel and dice the potatoes and the carrots and chop up the onion.

Place the beef stock into the crock pot and turn it to low. Add the beef broth, vegetables and the seared meat and the butter. Cook on low for 8 – 10 hours or on high for 4 – 6 hours. Enjoy!

Note: You do not have to sear the roast before cooking but I find that it makes the roast more flavorful. You may also add your favorite seasoning but my family just likes for the roast and vegetables to be prepared simply.

You can serve this as is, or add some cornbread, biscuits, or just sandwich bread. No matter which way you choose, I truly hope you enjoy this recipe.
