Lemony Chicken Orzo with Spinach

This is one of my favorite meals to make especially in the summer months on those hot summer days. This is a one pan meal and is really simple to make. You will need the following ingredients:

Recipe:

1 – 2 pounds of boneless chicken breast

1/4 cup of flour

1/4 teaspoon of garlic powder

1/4 cup of oil

14.5 oz can of chicken broth

1 cup of water

8 oz of orzo

2 cups of spinach

1/4 cup of onion

2 lemons

5 leaves of fresh basil

salt and pepper to taste

Garnish: Lemon wedges, grated parmesan cheese, and cherry tomatoes

Trim and slice the chicken breast into thin cutlets. Salt and pepper them to your taste on both sides.

Add the flour and garlic powder to a plate and mix well.

Preheat a large skillet to medium high heat.

Place the thin chicken cutlets into the flour and coat all sides.

Add the oil to the pan. When the oil gets hot add the chicken cutlets and cook for 8 – 10 minutes or until the internal temperature reaches 165 degrees. Cook time will depend on the thickness of your chicken cutlets.

While the chicken is cooking, wash and zest the lemon, wash the spinach and dice the onion up.

When the chicken is cooked through and golden brown, place it onto a plate. Drain the oil from the skillet and add the chicken broth, onions and water and bring to a boil.

Place the orzo in the skillet and stir and cover and cook gently for 8 – 10 minutes or until the orzo is cooked through.

Add the spinach, lemon zest, the juice from one lemon, salt, pepper and chicken into the skillet.

Heat until the spinach has wilted. Enjoy!

Note: You can use any pasta you like and if you don’t like onions or spinach just leave them out.

We like to serve this with a slice of lemon on the side.
