I decided to mix up a batch of my banana pancakes this morning for breakfast at my husband’s request. They are so easy to make and use simple ingredients that most of us have in our homes. You will need the following ingredients:

Recipe:
2 bananas
1 egg
1 cup of whole fat buttermilk
3 tablespoons of butter
1 tablespoon of butter or oil for cooking the pancakes
1/4 cup light brown sugar
1 1/2 cup self rising flour
Additions: Maple Syrup and butter
In a small bowl melt 3 tablespoons of butter.

In a medium size bowl peel and mash the bananas into small pieces.

Add the egg and buttermilk and brown sugar and stir together.

Next, add the flour and melted butter and mix together until well mixed.

Preheat a large non-stick skillet or a griddle pan to medium heat.

Place a little bit of butter in the skillet and add the pancakes and flip them once, cooking them until they are golden brown on both sides. Enjoy!
Note: This recipe could also be made with pancake mix. All you would need to adjust would be instead of using water change some of it to buttermilk and just add the mashed bananas.
We like to serve this very simply. We just add a small pat of butter and some maple syrup. If you have any leftovers they store great in the refrigerator for the next morning or you could freeze them.
This recipe will make about 12 medium size pancakes or 6 – 7 larger ones.
