Green Beans and Fresh Potatoes from the Garden

This is a recipe that my family enjoys several times throughout the year. It is a simple side dish that goes with several different menus, and it is a great dish to carry to a potluck. You will need the following ingredients:

Recipe:

1 quart of green beans or 1 – 2 pounds of fresh

4 – 5 yukon gold potatoes

1 tablespoon of butter, shortening, or bacon grease

salt and pepper to taste

Wash and peel the potatoes and cut them into slices.

If you are using fresh green beans, wash and string them and break them into bite size pieces.

In a medium saucepan place the green beans and the potato slices and cover with 1 inch of water . Add the butter, salt and pepper and place a lid on and cook on medium high until the potatoes get done if you are using canned or frozen. Enjoy!

Tip: If you are using fresh green beans, cook them for an hour or more or until they get tender. Fresh green beans take awhile to cook. You could also put this in the crock pot for 4 – 6 hours on low.

Note: This recipe can be cooked using fresh potatoes that you have just dug from the garden or potatoes you buy at the store. In a pinch you could even use canned potatoes.

We like to serve these green beans and potatoes especially when the cucumbers, onions, and fresh tomatoes are coming in from the garden. This is great with a side of chicken, meatloaf, pork chops, or just as a meal by itself with a side of cornbread.
