Has anyone ever had a cornmeal pie? This pie is considered an old family favorite. I think some consider this the poor man’s way of having a pecan pie since it tastes very similar just without the pecans. You will need the following ingredients:

Recipe:
1 1/2 cup of brown sugar
3 eggs
2 tablespoons of water
3 tablespoons of cornmeal
3 tablespoons of butter, melted
1 teaspoon of vanilla
1 unbaked pie crust (my recipe linked below)
Preheat the oven to 300 degrees.

In a bowl mix together the brown sugar and corn meal and sit aside.

In another bowl add the water and eggs and beat them until they foam.

Add the mixture of brown sugar and cornmeal, then the melted butter and vanilla. Mix this mixture together well.

Pour this mixture into the unbaked pie shell and bake for 50 – 60 minutes or until the toothpick comes out clean when inserted into the middle of the pie.

Let cool to room temperature before serving. Enjoy!

Store the leftovers in the refrigerator.
Note: You can certainly use a frozen or refrigerated pie crust from the store if you do not wish to make a homemade one.
This pie is so delicious and it is so easy to make. It is especially a good pie to make if someone you are cooking for can not have the pecans. I have taken this to family gatherings, church pot luck’s and sometimes I just make it to enjoy with my immediate family.
