Chunky Homemade Chili

I love making homemade chili. To me it tastes so much better than store bought and it is really simple to make. You will need the following ingredients:

Recipe:

1- 1 1/2 pound of ground chuck

1 large onion

1 jalapeno pepper

1 bell pepper

32 oz diced tomatoes (any style will do)

6 oz can of tomato sauce

2 15 oz cans of chili beans or pintos

4 teaspoons of chili powder

1 teaspoon of smoked paprika

2 1/2 teaspoons of ground cumin

salt and pepper to taste

In a large dutch oven or pot add the ground chuck, salt and pepper and cook this until the ground chuck is cooked through. Drain and return to the heat.

Chop the peppers, onion and garlic up and add this to the ground chuck and cook for 3 minutes.

Add the chili powder, cumin, and smoked paprika and cook for about 3 more minutes. Tip: This allows the spices to heat up and toast a little, giving the dish more flavor.

Add the chili beans. You can substitute any beans you have or like.

Stir in the tomato sauce and the tomatoes and simmer on low for 20 minutes or so. Check the spices to see if you need to adjust them. Everyone’s spice level is different. If you want this to be spicier you could add some cayenne pepper.

After adjusting the spice level you can serve this or just continue letting it simmer on the stove top. Enjoy!

Note: You can also cook this recipe in the slow cooker, just cook your ground chuck before adding it to the slow cooker with all the other ingredients and cook it on low for 4 – 6 hours.

I like to serve this with some saltine crackers or make chili cheese french fries. If you have leftovers, chili cheese baked potatoes are pretty good too.
