This is a recipe that came together when I had tried to duplicate a Cajun chicken pasta that I had at a restaurant a while ago. This is so simple to make, and it was really close to the chicken pasta that I had. You will need the following ingredients:

Recipe:
2 chicken breast
1/2 large onion
1 large clove of garlic
1 cup of pasta water
1 tomato
2 handfuls of fresh spinach
1 cup of heavy whipping cream
2 tablespoons of oil
1/2 pound penne pasta
1 1/2 teaspoon of cajun seasoning
3/4 cup of parmesan cheese
salt
In a pot boil and cook the pasta according to the package.
Preheat a large skillet on medium high heat.

Trim and dice the chicken breast into bite size pieces. Add 1 1/2 tablespoons of oil to the skillet and then add the chicken breast. Salt and add a dash of cajun seasoning to the chicken and cook until golden brown. Should take about 7 – 10 minutes.

Diced the onion and tomato up and mince the garlic into small pieces
Wash the spinach and chop or tear into smaller pieces.
After the chicken has cooked through, take it from the pan and place it into a bowl.

Add 1/2 teaspoon of oil and add the onion and cook for about 3 minutes. Add the tomatoes, spinach, garlic and 1/2 cup of pasta water to deglaze the skillet. Cook for another 3 minutes. Stirring and scraping the bottom of the skillet to get the brown off the bottom.

Next add the chicken back into the skillet and cook for another 3 minutes.

Add 1/2 cup of pasta water, cajun seasoning, and heavy whipping cream to the skillet and cook for another 5 minutes. Add the parmesan cheese and stir. Enjoy!

Note: Adjust the amount of cajun seasoning to your spice level and use any pasta shape you like.
