Marinated Chicken Fajitas

I love making chicken fajitas. This is a recipe that I came up with, as I like the more authentic taste, instead of using those packets of fajita mixes that are in the grocery stores. You will need the following ingredients:

Recipe:

For the Marinade

2 limes

1/2 cup avocado oil ( or your favorite oil)

2 cloves of garlic

1/2 teaspoon of cumin

1/2 teaspoon of salt

pinch of red pepper flakes

For the Fajitas

2 boneless chicken breasts

1 bell pepper

1 onion

1 jalapeno pepper

1 tomato

Flour tortillas

Condiments: sour cream, cheese, guacamole, and pico de gallo (recipe linked below) or whatever you like

In a bowl add the avocado oil then grate or finely chop the garlic and add it. Then add the pepper flakes, cumin, salt and lime juice from the limes. Whisk this together.

Trim the chicken breast and slice into small strips and add to a bowl or freezer bag and then add the marinade.

Mix the marinade and chicken together and place this into the refrigerator for at least 15 minutes.

Slice the bell pepper, onion, and jalapeno pepper into thin strips. Dice the tomato up into bite size pieces.

Preheat a large skillet on medium to medium high heat and place the chicken breast strips into the skillet using a fork or tongs. Discard the marinade.

Cook the chicken for 8 – 12 minutes, stirring often and making sure the internal temperature reaches 165 degrees.

Take the chicken out and add the vegetables to the pan with a tablespoon of oil and the vegetables for 3 minutes or as done as you like them.

Place then chicken strips back into the skillet with the vegetables and stir it together with the vegetables.

Preheat your tortillas on a non-stick skillet or in the microwave. Enjoy!

Note: You can also use this marinade to marinate beef and shrimp. You do not have to marinate your chicken strips but it brings a whole new level to this meal.

I serve these chicken fajitas with my homemade rice and refried beans.
