My extended family loves this old broccoli casserole recipe so anytime we have a family dinner or a potluck at work or church this is one recipe that I like to make. It is so easy, and it comes together instantly and you almost never have any leftovers. You will need the following ingredients:

Recipe:
2 cups of broccoli florets
1 cup of mayonnaise
1 can of cream of mushroom soup
1 sleeve of buttered crackers
4 oz or one cup of shredded colby jack cheese
1 egg
salt and pepper to taste
Preheat the oven to 350 degrees.

Steam the broccoli until it is tender. Drain any water out of the broccoli and place it into a bowl and add the mayonnaise, cream of mushroom soup, egg, and salt and pepper.

Mix this really well and pour into an oven safe 8 x 8 dish.

Shred the cheese and place it evenly on top of the broccoli mixture.

Crumble the crackers up and add them on top of the cheese.

Place the casserole into the oven and bake for 30 minutes or until it is golden brown. Enjoy!

Note: You can use any type of cream of soup in this casserole and your favorite cheese too.
This is good served alongside some chicken, pork chops, or just a veggie night.

If you are not a fan of mushrooms you may want to try the cream of onion soup instead. I have used this too and it just gives this a nice onion flavor that is not overpowering.
