Copycat KFC Coleslaw

This copycat KFC coleslaw recipe is a recipe that I like to make when I am cooking up fried chicken. It is also a great recipe to carry to a large gathering or on a picnic. It is a really simple recipe to make, and it tastes almost exactly like the restaurant’s. You will need the following ingredients:

Recipe:

4 cups of shredded cabbage

1/4 cup of buttermilk

1/4 cup of mayonnaise

2 1/2 tablespoons of sugar

1 tablespoon of lemon juice

2 1/4 teaspoons of white vinegar

1/2 teaspoon of salt

1/4 teaspoon of black pepper

1 cup of shredded carrots

1 1/2 tablespoon of grated onion

In a medium bowl add the cabbage, onions and the carrots and stir this together.

In a small bowl add the buttermilk, mayonnaise, sugar, lemon juice, white vinegar, salt and pepper and whisk this together until it is combined.

Pour the dressing over the vegetables and stir this together and then cover and place in the refrigerator for at least 1 hour before serving and up to 3 days. Tip: The coleslaw will make water and so this mixture will be really juicy so if you want a drier coleslaw then just drain the excess water or you could also just serve the coleslaw with a slotted spoon. Enjoy!

Note: You can easily double this recipe and even make it ahead of time if you are taking it to a large gathering and need an easy recipe.

I like to serve this with fried chicken and fries on the side.
