Skillet Fried Corn

I came up with this easy recipe one year after I had gotten tired of eating cream corn, boiled corn, and grilled corn. When you grow your own corn, you get an abundance of it most of the time and I like to figure out different ways to enjoy it. You will need the following ingredients to make this:

Recipe:

4 ears of sweet corn

1 tablespoon of butter

salt and pepper to taste

Start by silking, washing and cutting the corn from the cob.

Preheat the skillet to medium heat. (I use a non-stick skillet for this recipe.) Add the butter, corn and salt and pepper and cook until slightly brown bits appear. This corn mixtue needs to be stirred often. Be careful not to burn it. It should take 8 – 10 minutes. Enjoy!

Note: My family enjoys this corn on the side of chicken or pork along with a few other vegetables like potatoes, broccoli or green beans. It is especially good along the side of a bbq supper with ribs, potato salad, slaw and baked beans.

This is a really different way to enjoy corn when you have tired of the other ways.

Corn cutting trick: I place a cereal bowl upside down inside a cake pan to cut the corn off the cob if I am just cutting a few ears. That way you don’t have a bunch of the corn kernels going all over the kitchen while you are cutting it off the cob.
