Double Chocolate Fudge Coca-Cola Cake

I loved eating this chocolate cake at a local restaurant whenever I was in the mood for a sweet treat. If I happened to be out of town I would visit the restaurant to get this treat, as you always knew it would be good. I decided to make it myself and this recipe is extremely close, if not exact. You will need the following ingredients:

Recipe:

4 tablespoons of butter

1 cup of chocolate chips

3 eggs

1 2/3 cups of sugar

2/3 cup of vegetable oil

1 teaspoon of vanilla extract

1 1/2 cups of Coca-Cola

2 cups of self rising flour

1/3 cup of cocoa

Icing

1 1/3 cups of chocolate chips

6 tablespoons of butter

1 teaspoon of vanilla

pinch of salt

2 cups of powdered sugar

1/3 cup of Coca-Cola

Preheat the oven to 350 degrees.

In a small saucepan, melt 8 tablespoons of butter and 1 cup of chocolate chips on low. Take extra care not to burn the chocolate.

In a medium bowl add the eggs and sugar and mix this with a hand mixer until it is light and fluffy. Add the vanilla and the oil and mix again until well combined.

Add 1 1/2 cups of Coca-Cola and the melted chocolate and mix again until mixed well.

Add the flour and cocoa and mix just until it comes together.

Pour this cake batter into a 9 x 13 baking dish and bake for 35 -40 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and make the icing.

In the same saucepan that was used before add the remaining chocolate chips and butter and cook this on low until the chocolate and butter melts. Tip: You can use the microwave to do this step if you prefer too.

Remove from the heat and add the vanilla, salt, Coca-Cola and powdered sugar and mix this with a mixer until it is smooth and creamy.

Add the icing evenly to the cake and serve. Enjoy!

Note: You can use your favorite variety of chocolate chips. I prefer to use milk chocolate.

I like to serve this cake warm with a scoop of vanilla ice cream or with some whipped cream and berries on the side.
