This is a family favorite of my husbands. This casserole is a super simple meal to make especially when you don’t have a lot of time to prepare a meal. You will need the following ingredients:

Recipe:
3 medium potatoes
2 carrots
1 onion
3 – 6 bone in pork chops
1 can of golden mushroom soup
1/2 can of water
salt and pepper to taste
Preheat the oven to 375 degrees.
Wash and peel the potatoes and carrots.

Slice the potatoes into round circles 1/8 of an inch thick. Slice the carrots into thin slices also.
Peel the onion and slice it into thin slices.

In a large baking dish, place the potatoes on the bottom layer, then cover with the layer of carrots, and then layer the onion slices on top.

Mix the golden mushroom soup with 1/2 can of water in a small bowl. Pour the golden mushroom soup mixture over the vegetables.

Then place the pork chops on top of the soup. Salt and pepper the pork chops.

Bake this in the oven until the vegetables are tender and the pork chops are done. This should take around 45 – 60 minutes. Cook time will vary according to how thick the vegetables and the pork chops are.

Note: This can be done with boneless pork chops also but you may want to get the thicker ones so the pork chops do not dry out. You could also add this to a crockpot and cook on low 6 – 8 hours.
We serve this as a single dish without any side dishes as this already has vegetables in it but you could certainly serve this with a side of broccoli, green beans, or a side salad.
