Southern-Style Fried Okra

This is a southern recipe that you don’t find in many homes or restaurants anymore here in the south. Most people like to serve deep fried battered okra. I love fried okra, but I have to admit I am a little bit picky about it. I do not like the ends that a lot of okra served around here have on it and I prefer it fried instead of battered. The following is the ingredients you will need:

Recipe

2 cups of okra, about 1/2 pound fresh

1/4 cup of cornmeal

1 tablespoon of butter

1 tablespoon of oil, neutral

Salt and Pepper to taste

Start by slicing both tips from the okra and slice each piece into small circle slices.( If you like the ends, by all means keep them.) Preheat the skillet on medium heat adding the oil and butter inside. While the skillet is heating, place the okra in a bowl and add the cornmeal and the salt and pepper to your taste.

Stir making sure that each okra piece is well coated with the cornmeal. When the skillet is heated, place the okra inside and cook until golden brown, stirring occasionally. Should take about 10 – 12 minutes. Be careful not to burn. Enjoy!

Note: I like to serve this as a vegetable with many meals including chicken, pork chops, or even ham. I sometimes even add cajun seasoning to it.

I have to admit, I grow my okra every year and I put it up in the freezer. I wasn’t sure if you could purchase okra frozen or fresh that wasn’t battered but I was able to find frozen okra in the freezer section at my local stores. I am sure that the frozen okra in the freezer section would taste almost as good as homegrown.
