These potatoes are a family favorite and are so easy and simple to make and they can go with a lot of different vegetables and meats. To make these you will need the following ingredients:

Recipe:
5 – 6 medium sized potatoes
1/4 cup of vegetable oil (or enough to coat the bottom of your skillet)
Salt and pepper to taste
Preheat your skillet on medium to medium high heat and add the oil. I like using a skillet that has a lid as this makes for more even cooking.

Start by washing and peeling your potatoes. Then cut them into cubes or circles, whichever you prefer, and place all the potatoes into the hot skillet, being careful not to splatter the oil.
Salt and pepper to your taste. Add the lid and cook for about 20-25 minutes turning the potatoes occasionally. The cooking time will depend on how big your potato pieces are. Your potatoes will get golden brown and fork tender when done. Enjoy!

Note: My family loves these potatoes cooked with pinto beans and cornbread or sometimes we even serve them at breakfast with biscuits, eggs, sausage, ham, bacon, or gravy. No matter how they are served they are truly enjoyed by my family.
You can also jazz up these potatoes by adding cheese, bacon pieces, and green onions with a little sour cream on the top.
Use any oil you enjoy cooking with including olive oil, avocado oil or even bacon drippings. I have even cooked these with butter.
