This is one of my favorite cake recipes to make as it is really simple to throw together and it tastes amazing. I use a boxed cake mix most of the time when I bake this. You will need the following ingredients:

Recipe:
1 20 oz can of pineapple slices in pineapple juice
1 10 oz jar of maraschino cherries
1 box of white, yellow, or vanilla cake mix
1/3 cup of butter
1 cup packed brown sugar
1/3 cup of oil
3 eggs
Preheat the oven to 350 degrees.
(I use a large 12 inch cast iron skillet but you can use a 10 inch skillet or whatever pan you have that is about the same size, 8×8, 9×9, or a springform pan.)

In a medium bowl add the cake mix, eggs, oil and 1 cup of the drained juice from the pineapple can. If you don’t have quite enough just add water until you get a cup.
Mix the cake batter together until it is lump free.

Place a large oven safe skillet on the stove and turn the heat to medium. Add the butter and the brown sugar and heat until it just starts to bubble.

Remove from the heat and lay the pineapple rings inside the skillet and add a cherry in the center of each ring.

Carefully pour the cake batter over the pineapple rings and place the skillet into the oven and bake for 25 – 35 minutes or until a toothpick in the center comes out clean.
Remove from the oven and let the cake sit in the skillet for 5 minutes.

Place a larger plate over the skillet and flip it over. Be very careful doing this as the liquid in the bottom of the skillet is still really hot.

Let the cake sit and cool for a few more minutes. Enjoy!
Tip: If you do not like cherries you could add pecans or walnuts in the center instead.
I like to serve this cake as is, as it is such a delicious way to end a great meal.
