Granny’s Fried Squash

I love making fried squash with fresh squash that I have gathered from my garden or purchased at the local grocery store. This recipe was made every year by my granny and passed down to us for several generations. You will need the following ingredients:

Recipe:

5 – 6 fresh yellow squash, sliced into circles

1/2 cup of vegetable oil

3/4 cup of cornmeal mix

1 tablespoon of sugar

salt and pepper to taste

Preheat a large skillet to medium heat. Add the oil and let it heat up.

Place the cornmeal mix into a medium bowl and add the yellow squash, salt and pepper. Stir this carefully until the squash is evenly coated on all sides. Tip: You can use zucchini in this recipe if you have some on hand.

Place the squash into the hot oil and fry until the squash is evenly browned. You will need to stir this often as you do not want the squash to burn. When the squash has cooked through, sprinkle the sugar over the top and stir one more time. Adding the sugar is optional but it is something my granny always did. Total cook time should be around 12 – 15 minutes.

Remove the cooked squash to a paper towel lined bowl to drain some of the oil off before serving. Enjoy!

Note: You can also use plain cornmeal instead of the cornmeal mix.

I like to serve this fried squash with some creamed potatoes, fresh green beans and some sliced vidalia onions on the side.
